Macool's Blarney Stone

Despite all my rage I am still just a rat in a cage (Without the password)

I want to take a couple weeks to let you all know some of the differences in styles of beer. What is a stout? What is a porter? These and many questions will soon be answered.. Enjoy!

First published in: Boston's Weekly Dig

Most Americans look at Stout as a thick, murky, "eat it with a spoon" beer. It is also a common misconception that these black beers are more potent, simply due to their appearance. Plenty of Bostonians see it as a nitro forced black beverage and happily quaff down several pints a night with out a second thought, usually a Guinness Draught or Murphy's. Guinness has less alcohol than Budweiser, around 4.2% alcohol by volume (on tap, 4.1% draught can, in the US) which would explain why everyone can drink so much of it, so quickly, and why it has become a popular session beer. But, here's a little Stout 101 for the novices, for those that might want to switch things up a bit: We have all been to one of the many Irish pubs in the area, and friends or co-workers talk in awe about Guinness and how it is the best stout, if not beer, in the world. Not entirely true. The modern day Guinness "on draught version" is definitely the best selling Stout in the world, but there's more to the story.

There are many variations of the stout beer style. Some are dry and some are sweet, some hoppy and some alcoholic. All have that common characteristic of a roasted flavour that sets them apart from any other style. Usually this roasted character comes from the use of roasted barley, which is barley grain that has not been malted, but rather highly kilned. The process imparts a uniqueness to the grain and creates flavours ranging from bitter unsweetened chocolate to coffee, to a dry grain astringency.

In the late 1600's to early 1700's, the term "stout" was often used to reference a strong beer. When the term actually became a style is up for interpretation, however, what we do know is that back in the late 1700's, when Guinness was first brewing what was then called its Porter, it was not brewing the light bodied easy to suck down creamy stout that most imbibers enjoy today. It was a dark murky looking brew, standing, roughly, a whopping 7.5% abv. Guinness first brewed a strong export style to be shipped to the Caribbean, an Export / Foreign Stout, hence the name Guinness Foreign Export Strong Porter (later to be called, Foreign Extra Stout). It had a very complex, huge body, big hop profile and an intense robust character. You can still purchase it today -- and it's very much brewed the same way -- but only in Asia, Africa and the Caribbean.

In the very late 1700's, some English breweries produced an export stout, similar to a foreign export, specifically for the Baltic area. This variation was called a Russian Imperial Stout. Brewed to an extreme strength, around 8-11% abv, and conditioned for months, even aged for years before consumption, these brews were quite popular within the Russian Imperial Court. The closest rendition of this brew is A. Le Coq Imperial Extra Double Stout imported by B. United International. Others include: North Coast's Old Rasputin Imperial Stout, Smuttynose Imperial Stout, Sam Smith Imperial Stout and Rogue Imperial Stout.

One of the most common stouts, Dry Irish Stout, can be any where from 3.5-5.5% abv, with a moderate body to keep it on the drinkable side. They're usually a lower carbonation brew and served on a nitro system for that creamy, masking effect. Bitterness comes from both roasted barley and a generous dose of hops, though the roasted character will be more noticeable. Examples of the style are, of course, the big three, Murphy's, Beamish and Guinness (draught, can and the bottled Guinness Extra Stout, 6.0%), however there are many American brewed dry stouts that are comparable, if not better. Gritty Mcduff's Black Fly Stout and Shipyard Bluefin are the best stouts to come out of Maine, and they are available in Boston. As for local stuff, John Harvard's dishes out a mean Dry Irish that we consume pitcher after pitcher, Boston Beer Works Curley's Irish Stout was reformulated a while back and is superior to Guinness Draught in our opinion and Northeast Brewing Company's Black Sow Stout is also a treat, with its rounded roasted bitterness and hint of smoke.

An often ignored style, the Sweet Stout, is one of the youngest styles (early 20th century). They contain large profiles of crystal, amber, roasted and pale malt blends and usually range between 6-8% abv. A sweet stout variation also includes lactose or milk sugar, and often additions of cane or other fermentable sugars for priming, dubbed a Milk Stout. Additions of oatmeal are commonly added to both to induce an even smoother mouthfeel and body. Sam Smith's Oatmeal Stout, Sam Adams Cream Stout, Young's Luxury Chocolate Stout, John Harvard's Milk, Mackeson's XXX Milk Stout and Tennent's Stout are prefect examples.

Another old style of stout once contained ground oyster shells, oyster meat or just oyster juice. The Oyster Stout is said to be a style inspired by the early 19th century London dock workers, whose staple diet was ... oysters and stout. At first, brewers used finely crushed oyster shells to filter their brews, but later, the adventurous slipped shucked shellfish into their stouts, and the style was born. Oyster Stouts are extremely rare these days, but you can make your own by adding the left over liquor from a shucked oyster and blending it with your favourite stout - a strong one is recommended.

One of the most brilliant births to come out of the micro-brew revolution of the 80's is the American Stout. American brewers embraced the styles of old, but basically said "Okay, but how can we make it better?" Sierra Nevada Stout, Redhook Double Black Stout, Rogue Shakespeare Stout, Boston Beer Works Buckeye Oatmeal Stout and Ipswich Oatmeal Stout are just a few answers to the question. This style 100% American in uniqueness and taste, and should be 100% supported. Buy, drink and celebrate.

So, as you can see, there is more to stout than that low-alcohol creamy milk shake-like thing in your hand. Go ahead and drink it, have another if you like, but consider alternatives now and again.

Okay yall Mac is back. Lets get this updated!!!

DEJA VU! San Francisco again. (10/15-10/17/05)

Once again Big Kahuna and I were off to San Francisco for another fun filled weekend. Started the day off by calling in sick to work. A nice breakfast at a local favorite. Time to load up and hit the airport. Of course I used the excuse of a beer to help the ease of the flight.   The bar in the terminal had Newcastle on tap. Very good choice beer. Sitting there enjoying the beginning of another great weekend then Big Kahuna had a little spark in his brain go off. Some one forgot the tickets to the Raider game. With the plane boarding in 20 minutes he had to get a cab and race back to his pad and back. Luckily cab drivers are usually crazy ass drivers. He made it back in time to finish off what was left of his beer. The rest must have evaporated.  Hmmmmm. All I can say is DUMBASS!!!

We flew United for the last time. Way to much time wasted on planes breaking down. The only good thing about our trips this month on United was the hot norweigen stewardess on the flight up there. Other than than Southwest here we come. Screw United Airlines!.

We made it to San Francisco. Kahuna had to start the trip off at the Swan Oyster Depot. A line out the door was worth the wait. The quality of the food and service was exceptional. Hence why they have a line out the door. Kahuna went for the crab and I for the shrimp.   Of course we had to head to our usual stand at Fishermans Warf. The fried shrimp is the best around. The portions are always good. We walked a little of this food off around the Warf. The weather was perfect. Not too hot. Nice and sunny. Couldn't have picked a better weekend.

On a walkabout last time I was in San Francisco I came across and Irish pub. We decided to head there for this trip and check it out. The place was O'Reilly's. The place was packed. So we took to what has become our usual spot outside. Over 15 beers on tap. With Guinness, Newcastle, and Murphy's. You can't go wrong. Probably one of the most relaxing times I've had in a while. Think we sat there for about 5 hours. A must go place if you ever head up north.  Next we went on to what has become a favorite hangout for us. Vesuvio Cafe.   It's a nice little bar that my cousin Rob showed us. And to think I always thought he was good for nothing. He just got lucky on this one, but thanks none the less.  The atmosphere there was great. Staffed with some nice looking ladies helps I'm sure.

Sunday ! Sunday ! Sunday !

It's Raiders time baby ! Took the subway to the stadium time. Nothing like being a few hundred feet underground with millions of gallons of water on top in earthquake town. My first subway ride so it was cool. It dropped us off right at the coliseum. These had to be the best seats I have ever had for a sporting event. 4th row at the 50 yard line. The Raiderettes before the game started came up into the stands to meet the fans. Lucky for us it was right where we were sitting. I got to meet a few of the ladies including a couple of my personal favorites Loreen and Cherie   Win or not today was a great day. All the ladies looked great. Be sure to check out this link to the Raiderettes for more good pictures.

On to the game. The Raiders vs. the san diego chargers. For some reason the Raiders are not seeing that Tomlinson runs all over them all the time. The charges played a great game and beat my Raiders. Kahuna and I gave Kerry Collins an earful when he walked by. It sucks losing but the experience is always awesome. Not to worry. The Raiders took it out on Buffalo the next weekend and whooped some ass ! Go RAIDERS!

Later that night we had dinner at the U.S. Restaurant in little Italy. For starters we had steamed muscles and clams. MMM good. way to start off a meal. The bean fritters (panelle) were well made. The touch of lemon made it and awesome appetizer. Kahuna went with the spaghetti and meatballs. I settled for the fettuccini alfredo and chicken. A guy at work tells me stories of the food his Italian mother used to make. This meal was that type. Perfection of Italian cooking. By far the best Italian meal I've ever had. It would be hard for me to try another restaurant for Italian food. It may be the best you will ever find.. A definite must go.

Of course we finished the day off at O'Reilly's pub. A few more Guinness to go. Later that night a lady and her mother came out of the bar. The daughter in her 80s and mom at the age of 101. A Guinness a day equals longevity. You go Great Grandma. A couple hours later Kahuna spotted a guy in a kilt with bagpipes. He made the mistake of calling him Scottish. I explained the differences in the kilt colors to Kahuna. The Irishman heard me and approached our table. Chatted with him a little. Good Guy. Like I said before. O'Reilly's is the place to go.

Of course you have to stop back at Fishermans Wharf to top off the evening with some more fried shrimp. Moki our usual hookup over did it this time. It was near closing. He gave us at least a tripple order. That's roughly around 4 to 5 pounds of shrimp for $8. That will put you in a food coma.

Monday the sightseeing tour. We took a small venture north of the golden gate bridge. We got to check out some of the old battlements that used to protect the bay. It was pretty cool. They had one that after firing the guns would lower. Enemy ships found it near impossible to locate the position of the guns. Along this journey we ran through Sausalito. Definitely a nice place to go relax with a lady of your choosing. A small seaside community. I'm sure I'll be checking out that city soon.

We were sure not to miss China town this time. Last trip was a little busy so we made sure to make time. It's kind of funny being the tallest guy around. Did I mention the best Chinese food around. Still a little sunburned from the Raider game. It was pretty funny. Kahuna and I ate more than most Chinese families. How could you not pig out on this food. It's awesome. Don't worry on which place to eat at in China town. We have been to plenty of places and the food is good all over.

Overall a very successful trip. No maps needed anymore. We got the city down. Plenty of good food and fun. I'm sure the next trip to San Francisco will be even better. We know the spots so less time looking and more time enjoying. I'm sure we will be taking a week or two off here. Time to relax after a busy month. Don't worry we will surely have something to put on the site.

San Francisco (10/1-10/3/05)

Well oh well. Where the heck does one begin. If there is a beginning then their must be an end. 4 of the Beer Guys went on a tremendous weekend to the city by the bay. Just think. Four close friends out in a city with food, beer, women, and football. Ha ha starting to sound like college again.

To start the trip off we all met at the bar at the Burbank Airport in California. Mmmmm beer at 6:00 a.m. Hey had to have something to ease the nerves of flying. I love that excuse. Figure one or two beers and we are off. Make that 2 planes, 2 airports, 100mph shuttle in traffic. lots of pissed off people and about a dozen beers. Eight hours of travel time to start. Looks like we take Southwest next time.

I had a great time on just the trip to San Francisco. Airports are a very good place for some hot ladies. I did find the 50 year old guy with the about 20 year old hot asian wife funny. Can you say mail order, but hey what ever works for them. So we finally launched into the air. A special thanks to the pilot who found the problem on the first plane for finding the problem in the nick of time. On the runway with the engines gunning. Better than in the air.

The Beer Guys have landed

Finally made it to the city by the bay. Six hours past our scheduled time. Hungry and thirsty. Through the airport, rental car then to the hotel. It has begun. The Hyatt was a very nice hotel. Good location. Good choice on that one Big Kahuna. At the hotel for about 15 minutes. We had to polish of a twelve pack of Budweiser. By Monday the hotel staff must of loved us. Beer cans everywhere. All trashcans and any flat surfaces full. Sorry ladies..

Out the door and on the run.

By this time we needed food. We were wasting away to nothing. First stop Fisherman's Wharf. A little taste of fresh seafood. Lots of people lots of stands. A few piles of fried shrimp, crab and shrimp sandwiches, and a couple more beers.     The Wharf is a bustling place. Fast paced action. Especially the hands near our food. Watch out you don't lose a finger. Ok now the appetizers were done. Ha $60 worth of appetizers. Not bad for 10 minutes. Now onto a dinner. We need some food..  The Crab House at Pier 39 seemed like a good place to eat. We hear they have some good portions. We settled on the smallest crab plate. Didn't want to look like  a bunch of pigs do we.

Seven pounds of crabs was definitely no match for The Beer Guys. Big Kahuna and I will be taking on that crab plate here in a week or so without the big guys. Should be easy for Kahuna and I. We both hold a tie in the record at Tony Roma's Glendale, CA for the most ribs at one sitting. Boy people must hate me eat all that and keep slim.. HA HA... The food at the Crab House was great. Recommend to all to try it out. You wont be disappointed. The staff was great along with the atmosphere. Definitely a top 10 for the Beer Guys.

Dinner is done. Time to drink!

We started checking out the local nightlife. My cousin Rob who lives in the local area took the local public transportation and met up with us.

Don't know why this high priced lawyer would risk so much public humiliation hanging out with us but we had a good time. Of course its good to have a lawyer with you if you get into trouble. This section would be a little longer but it was a big blur. Lots of fun checking the nightlife. Didn't get into any trouble so a successful day......

DAY 2

As usual Macool was the first to rise. Out of the hotel why those bums slept off the booze. Out of the hotel and to the nearest water source for me. The town was just starting to wake up. I took a little walk about the neighborhood. Found a couple nice shops and learned the place a little. Didn't spend to much time out. I knew the guys would be waking and it was Raider day. A little more food, pick up some beer and of to see the  Oakland Raiders play the Dallas Cowgirls. I mean Cowboy. Thanks Raiders for winning this one.. Here is a few pictures of the Raider game parking lot and warm ups. A few of the game and for you Raider fans that is Chester McGlockton who sat just behind us.  Way cool. Nice guy.

Overall a great game. Sapp put a great hit on Bledsoe. More of a body slam. I'll take that penalty. The Raiders one. A few fights and arrests. A normal Raider experience....

Later that day back to good food and drinking.. Another successful day in San Francisco.

Day 3: Monday morning

Here we go again. Macool awake with the sun. The rest of the bums sleeping. Now time for a good walk about. It was Monday morning. A great time to see the regular life of San Francisco. People out all over. Made a trip through little Italy. The old men sitting at the cafe playing chess. On through Washington park to see the locals doing their morning Tai Chi workout. into Chinatown. Seeing the old ladies out shopping for the days food. It was nice to see the normal not weekend life of the city. Next week I'll remember to take my camera for some pictures. After a few hours I made it back to the hotel. The crew was gearing up for Molinari's. Truly the best sandwiches around.

If you don't stop by Molinari's on a trip to Frisco you are truly missing one of the greatest places the city has to offer. Just off Columbus street in little Italy.

After this meal we went on a little tour of the city. The Golden Gate Bridge incase someone on this planet doesn't know. Definitely not Mr. Capones favorite place. Alcatraz. An old Fort under the Golden Gate. Closed of course.

A wrong turn looking for a good place for a brew took us into the parking lot which happened to house The Beach Chalet. That means San Francisco Brewing. Our ever so lovely bartender Nanrisa was more helpful with the food and the brew. As a dark beer lover I very much enjoyed their porter and ale. Well worth a trip there. A nice place for a brunch. Take your lady there and sit outside on the patio at the edge of the Golden Gate Park. A nice porter to take the edge off that sunburn from the Raider game. Make sure you try their beer bread. Mmm  good. A good beer, good bread, and a hot bartender. This is a place I will definitely be going back to in the future....

We made a trip through the Golden Gate Park and around the old hippie hangout of Haight Ashbury. It's fitting that they have a Ben and Jerry's on the corner so you can get a little Cherry Garcia and wonder by a tie dye shop and bring out your in loving and peaceful hippy.

Nearing the end. time to head to the airport and go back to our fun lives. I would like to say a few things about Frisco( locals hate it when we call it that).  An awesome place to go for food, nightlife, and some history. Way to many things to see on a weekend. You will have to make quite a few trips up there to start taking in all the city has to offer. One thing I have to say for the ladies. They are not like a lot of America. Ten pounds overweight is about as heavy as they get. Coming from Los Angeles I was amazed at how good in shape most of the ladies were in San Francisco.  Keeps your eyes moving. The food is second to none , The history is some of the oldest on the west coast. Kahuna and I like the town so much we will be back on the 15th of October for more. Be sure to check back in a week or so to see more of this Amazing city.

Okay I know we said that we would be updating after ST.PATRICK'S day. Like I said after the hangovers and there have been many. For some reason there has been left over beer. We didn't account for all these sissy drinkers so there was more for us and we couldn't let it go to waste.

A quick one for you all. Recently a couple of the Beer Guys went to a local place called Fuddruckers. This is a hamburger joint where you spend $7.00 for a burger and three for a beer. For some of you that may seem to be a lot. Trust me its not. For that money we got a burger that was a whole pound. Take that and a fresh cooked bun and its a lot to eat. This ain't that cooked down 80% beef, this is the good stuff. The two handed burger cooked your way. Medium rare for this beer guy. Along with the great burger they had a good choice of beer. Heineken to Guinness. Of course I chose the Guinness. That added with a basket of the beer battered onion rings with a cheese sauce and it was heaven. A truly good time at a truly good place. The oldies music and atmosphere made the experience complete. From this Beer Guy go to Fuddruckers and enjoy the great food and a great beer from their selection. A perfect 10 from me.

Don't drink and drive !!!!!

Check out the Irish store for some good Irish stuff. Just click on the leprechaun.

Here is a little 575!

All I want is beer

We will toast to Saint Patrick

Excuses to drink!

Once the hangovers subside we will update with our St. Patrick's Day adventures.....

The Irish Cheers

Sometimes you want to go to that place where everyone knows your name. You know the place. The one they yell out NORM when he walks in. Believe it or not there is a place like that here in the San Fernando valley in Southern California. In our beer quest Kahuna and I found a  little Irish bar called Timmy Nolan's. Red brick and wood to add to the ambiance. Truly one of the nicest crowds we have seen at a bar. Normally here in Los Angeles bars are nothing but meat markets. The atmosphere at Timmy Nolan's was very friendly. They make you feel like you have been a regular for years. You can't help but laugh with the other patrons.

Before we get to the beer lets talk about the food. Of course being an Irish place you can get your corned beef and cabbage. It wouldn't be Irish without it. Maybe you are in the mood for some bangers. We started out with the Irish nachos. Definitely not for one with a week heart. Irish potatoes smothered in cheese, bacon, and beef. I could feel my arteries closing as I ate. We all know that this price could only come with great food. All the meals we ate were superb. Definitely get the Irish nachos. You wont be disappointed.

Now on to the beer. I should leave it as Guinness on tap. That should be enough right there, but Kahuna did find something else. They know how to mix a half and half. Great separation which is important for this type of drink. Just take these two beers and add the pretty girl  who serves it to you and you have a winner. We will definitely be back for more. Hats off to Timmy Nolan's for having an all around good bar!!!!!!!!!!

It's a crazy world. Check out Utah beer laws!

Any Utah establishment that dispenses alcoholic beverages for consumption on its premises must have an appropriate license.  The number of licenses that can be awarded is based upon a ratio related to population.   The Utah licensing authority may, and does, defer to local sentiment in regard to the issuance of licenses.

Licensed establishments must be located at some defined minimum distance from schools, churches and other institutions which could be tainted by their proximity to booze.  Exceptions and variances to these regulations are available.

The Utah liquor laws are administered by The Utah Department of Alcoholic Beverage Control Commission. Currently, this commission is composed of five appointed members, four of whom are male Mormon lawyers and teetotalers. The commission meets regularly to tend to routine business, to invoke license suspensions, to declare exceptions and to award a few new licenses to lucky applicants.

A person must be 21 to purchase or consume alcohol. All liquor is dispensed by metered plumbing. One ounce per serving. No doubles. A patron cannot be served more than one drink at a time. Before a patron can be served a drink any previous drinks must have been fully consumed. No one under 21 can be present in a tavern or beer bar.

THERE ARE NUMEROUS CLASSES OF UTAH LIQUOR LICENSES:

TAVERNS, or BEER BARS
These establishments may sell beer no stronger than 3.2% by weight. They need not serve food.

AIRPORT LOUNGES  Can serve beer, wine and mixed drinks with or without food. There are only a very few of these. They are all located at the Salt Lake International Airport and are intended to give visitors a warm first impression.

BREW PUBS  Serves beer which was brewed on premises. There are some of these in the state.

RESTAURANTS  With the proper license, alcoholic beverages may be served with meals. Liquor bottles must be hidden from view. Servers are not allowed to solicit or suggest drinks. Patrons must request a wine list or drink menu. If a restaurant derives more than 30% of its profit from alcoholic beverage sales it can lose its license.

PRIVATE CLUBS  Beer, wine and mixed drinks may be consumed in non-exclusive private clubs between 10 AM and 1 AM. These clubs by law must be non-profit organizations, must charge a membership fee and are barred from advertising to boost membership..

3.2% beer can be purchased in grocery and convenience stores subject to local ordinances.

RESORTS & CONVENTION CENTERS   The regulations and laws in this area are confusing, complex and befuddling, sometimes requiring multiple licenses and permits.

Excerpt from the Ogden Standard Examiner - October 31, 1999

Proposed legislation creating a "Banquet" license designed to alleviate the Resort and Convention Center problem is now before the Utah State Legislature.

Cap Ferry, former State Senate President and author of the bill said he is still waiting for comments from the LDS Church.

"If they say 'No', it's dead." , Ferry said.

He added that he hopes LDS Church officials will give their position on the proposed license before the Legislature starts in January.   " We don't want to put in a lot of work only to have it killed an the last day."

UTAH STATE-OWNED LIQUOR STORES are the sole dispensers of carry-out liquor, wine and real beer. There are a number of these stores hidden throughout the state. They are closed on Sundays, holidays and other designated times.  Lack of competition keeps the selection severely limited. Prices for wine and liquor are fixed with a minimum of 61% mark-up over cost, plus high state taxes. For real beer, the mark-up is 75% plus taxes, making the retail cost of some six-packs well over $10. Because of all this, the small community of Evanston, Wyoming (located about 70 miles east of Salt Lake City just over the Utah border) enjoys a bustling economy based on a large number of retail liquor stores located along Interstate 80.

A note on Guinness

This little town we live in has made a huge step in the cultural world. It was my beer day off. Guess it was more of let the liver rest day. I went to pick up a Pepsi at my local 7-11. It's a convenience store to anyone who doesn't know. The purpose of going to this store is that they have a poor selection of high end beers. I get my Pepsi and walk past the beer. Not a problem. I can resist the temptation of the lighter beers like Budweiser. Unbeknownst to me this store stocked Guinness. I don't know if it was shock or withdrawals. Guess it was a little too much temptation. Somehow a six pack of the Draught bottles ended up in my bag. Not good for my liver day off but definitely a good move for this 7-11. Nice to see a better beer... Keep searching.. The beer is out there!

This one started it all.

In our younger days beer was something to pour in your mouth to get drunk. It made the girls look better and your muscles get bigger. Budweiser was king and we were stupid. Boy how do things change. One night I was out scuba diving with a friend out in the lovely Pacific ocean. It was over an hour trip to our favorite dive spot. Since we had an hour to kill on the way back we always stopped at our local quickie mart. I didn’t notice at first what was purchased by my buddy.  It was a six pack of Newcastle Brown ale. As we were cruising down the 110 freeway I got my first taste of a good beer. I thought why have I wasted all my time with cheap beers.. That is all it took. Just one to make the change.  This was a homage to the great beer that started it all for me. Remember we were young and stupid. Don’t drink and drive…And a big thanks to Newcastle.
